Weekend Update

It was a good weekend. 

I made the chicken stock and ended up with 5 meal worth of chicken meat (used my Mom's homegrown chickens which are really more like a small turkey) and 5 large bags (froze these) and 3 quarts of stock.  The house smelled wonderful!  And we will have some nourishing broth to get us through the next months of cold and flu season!  I can't wait to make a hearty chicken soup tonight for dinner and pair it with a large salad of spinach and greens from our CSA box.  So yummy!!!

Bill worked on laundry all weekend and made great breakfasts both days.  It is so wonderful to start the day off with a hearty breakfast (Mexican Stackers on Saturday and Hash on Sunday). 

Clean sheets and linens were distributed throughout the house and the main floor even got vacuumed.  (Now to wash all the others this week before changing them again next weekend!)

We were able to get in a nice long walk Sunday afternoon when Bill got home from work and I made a large crock pot full of hearty beef stew for dinner on Sunday.  Paired with a wonderful fresh green salad with homemade balsamic it was just the ticket to warm our bellies.  I usually am not super fond of beef stew made with large chunks of round steak, but this time it was so delicious (used Susan's make ahead beef mix to make the beef extremely tender). 

Our car is now listed on Craig's List for sale as we have finally decided we have enough cash saved to replace it.  We would like to get a Ford Escape as it has good gas mileage and enough room for the kiddos and stuff for traveling. 

The kids and I even made it to Church and Sunday School on Sunday and enjoyed great fellowship with all the people there. 

Now it is time to get back into the routine for this week.  Daycare drop off went great this morning and Libby and Eddie were fairly happy when they woke up and that always makes for a better start to the week!
