Crock Pot Pepper Chicken

This is one of my favorite crock pot recipes. We usually have it once per month and it doesn't matter if it is summer or winter because it is great hot or cold!

Crock Pot Pepper Chicken

1 large chicken breast, cubed
1 small can diced tomatoes
1 can black beans, drained and rinsed
1 medium onion, chopped
4 cloves garlic, minced
1 large bell pepper, seeded and diced
splash white wine (optional)
2-4 cups cooked brown rice, depending on how large of servings you want
shredded cheddar cheese
sour cream
guacamole
fresh diced tomatoes

Combine first 7 ingredients in crock pot and cook on high 4 hours or low 8 hours. Serve over cooked brown rice and top with shredded cheddar, sour cream, tomatoes and guacamole. This will serve approximately 4 people. Leftovers of this dish are great hot or cold, so I always make extra! I serve with a tossed salad on the side and it is a great quick and easy meal (especially if you have a rice maker and can set the timer for the time you need the hot rice). I have this rice maker and it is the absolute best!  I would highly recommend any of these rice makers, if you can fit them into your budget as they are fairly spendy.  We purchased ours with money gifted for our wedding.
