Spinach & Chevre Pizza

This is my absolute favorite pizza ever. I used to love the Papa Murphy's veggie de-lite pizza, but found them too expensive to eat on a regular basis. So I created my own version...

Spinach & Chevre Pizza

Crust
2 1/2 cups whole wheat flour (soaked if you desire)
1 cup warm water
1 tablespoon honey
1 tablespoon yeast
1 teaspoon salt
2 tablespoons olive oil

Proof the yeast with the warm water and honey for about 5 minutes. Add flour, oil and salt and mix. Let sit for 5-10 minutes in a warm place. Roll out on baking stone or pizza sheet. Poke holes in crust with a fork (all over so the crust doesn't get all puffy in the oven). Pre-bake crust until starting to crisp at 500 degrees (about 15 minutes).

Toppings
2 cups fresh chopped spinach
1 cup fresh diced tomatoes
1/2 cup sliced black olives
1/2 cup basil pesto (can be thinned out using olive oil if necessary)
2 cups shredded mozzarella
small log of chevre goat cheese
Fresh cracked black pepper
olive oil

Once the crust is pre-baked, spread the basil pesto on evenly. Then add spinach, tomatoes, black olives, mozzarella and put little lumps of the chevre all over the top. I add fresh cracked black pepper and then drizzle with about 1 tablespoon of olive oil.

Bake at 500 degrees until cheese is melted to your liking.

This is the best pizza ever and just typing up the recipe makes me hungry for it!

  1. Yum, I want to try both your recipes! Question: I've never bought chevre goat cheese... can I find it at a standard grocery store?

  2. You should be able to find it at a standard grocery store. It will be in the specialty cheese case.

    Sometimes it will be called Chevre, (that is the french name?) sometimes it will be just called goat cheese. You should find it in small packages like "logs".
