Poor Man's Meatloaf

My friend Dawn had me over for dinner one night and we had these unbelievably good hamburgers. She called them Poor Man's hamburgers because she stretched the ground beef with the fillers.  They were full of flavor and I loved them so much I made them at home the next week and William loved them too! I usually make up a pound of ground venison with these and cook three hamburgers then make the remaining into mini-meatloaves for snacking on later. They are great hot or cold!

Dawn's Poor Man's Meatloaf (or Hamburgers)

1 pound ground beef or ground venison
1 sleeve of saltine crackers, coarsly crushed
1 large egg
2 cloves fresh garlic, minced
1/2 cup finely diced onions
1/2 cup to 1 cup Italian Dressing
Salt & Pepper

Mix all ingredients together in a large bowl with your hands. Shape into hamburger patties or form into greased meatloaf pans. 

Fry hamburgers in cast iron pan on stove top or bake meatloaf at 350 degrees for about 45 minutes or until done. It is great with mashed potatoes topped with fresh butter and some green beans or broccoli!
