Bean Dip

This has been one of our quick and go to meals that we have enjoyed recently. It is so easy and you could have so many variations that it may never turn out the same twice!

Bean Dip

1 can refried beans (or make your own if you have time)
1/2 cup salsa
shredded co-jack cheese

Butter a glass pie plate and place in the refried beans, then salsa then cheese. Bake at 400 degrees until cheese is melted and bubbly.

You can top this with tomatoes, black olives, guacamole, lettuce, taco sauce, sour cream, more salsa and eat with tortilla chips or fritos. Any toppings seem to work well with this and it is a great way to use up a tomato or two that are starting to be over-ripe.

It is simple and yummy and I like it!
