Jalapeno Black Bean Burgers

This is a great recipe for homemade veggie burgers that I have found to be a good replacement for the store bought ones. They are quick and easy, and while they do not hold together as good as a store bought veggie burger, they are tastier and well worth the few extra minutes it takes to chop up the vegetables.

Jalapeno Black Bean Burgers

1 can black beans, drained and rinsed (I use ones I have cooked previously and froze and just eyeball the amount)
1/3 cup finely chopped onion
1 Roma tomato, seeded and finely chopped
1 small jalapeno, seeded (you could leave seeds in if you like the heat) and finely chopped
2 cloves garlic, minced finely (I just run them through a garlic press)
1/4 cup bar-b-q sauce
1/3 cup (or more if needed) bread crumbs

Mash beans in a medium bowl with a fork. Add remaining ingredients. Add more bread crumbs if needed to help hold the burgers together. Brown in a skillet with EVOO or coconut oil until heated through. Place on bun and enjoy.

I top with a chipotle mayonnaise (mayo and chipotle Tabasco or sauce from chipotle in adobo).

This recipe makes four burgers. Last night I served with tator-tots (a rare treat at our house) and a veggie tray. These burgers are good with or without buns.
